As I am writing this post, Thanksgiving day is parked right around the corner, ready to pop out with all of its glorious casseroles, stuffing, turkey, gravy and drool-worthy desserts. I AM SO EXCITED YOU GUYS!! Of course, I will try to be modest with my helpings, but just to be able to taste so many amazing things on one plate in one sitting is food heaven to me.
Food heaven is awesome on Thanksgiving. And maybe the next day. And the next. But then something weird happens. What was once food heaven turns into food purgatory. The turkey and stuffing start to taste dry. The vegetables start to feel a little funny. You have to microwave your rolls for 15 seconds to get them to a place where they won’t break a window. The food is still good, it’s just not the same as it was a few days ago. The big problem is you have so much of this darn stuff leftover. It literally pains me to throw out homecooked dishes, especially when other people spent quality time on them. Instead of tossing this food in the garbage, why not put a fresh spin on some of it? Create something new from the old? This meatloaf was born in the quest of doing just that. I am sure you are tired from cooking so much on Thanksgiving day, so this easy recipe is only 4 ingredients. Just mix and bake. Seems like nothing after all the mashing and brining that just took place doesn’t it!
For this Leftover Turkey Stuffing Meatloaf with Cranberry Glaze, I recycled my BACON, LEEK, AND GRUYERE POTATO BREAD STUFFING and HONEY CRANBERRY MARSALA SAUCE. You could absolutely use your leftover turkey if you have a MEAT GRINDER, but for ease of cooking and a little bit of freshness, I used ground turkey instead. It’s funny, my stuffing typically goes sooooo fast. The only reason I ever have leftovers is that I make 2-3 pans just so we can have some to enjoy for the next few days. Any stuffing would work, just make sure it’s not a super mushy stuffing or you may need to adjust the cooking time.

4 Ingredient Leftover Thanksgiving Turkey Stuffing Meatloaf with Cranberry Glaze
Ingredients
- 1 lb ground turkey
- 2 cups leftover stuffing
- 1 egg
- 1 cup leftover cranberry sauce
Instructions

Preheat overn to 350. Chop up stuffing into small pieces. Mix well with turkey and egg. Place in greased meatloaf dish and bake for 20 min. Remove from oven and drain any juice or fat that has accumulated. Coat the top of meatloaf with cranberry sauce and bake for another 10-15 min or until turkey has cooked through. Let sit for 10 min before serving.
Recipe Notes
This recipe makes a shorter meatloaf. To make a taller meatloaf, I recommend doubling all the ingredients except the cranberry sauce and baking a bit longer until the turkey has cooked through.
