Being a busy overnight working mama of a even busier toddler, some days just require easy an easy dinner. Don’t get me wrong, I love to whip up some tasty multi side dish, from scratch, finger lickin good food in my kitchen, but sometimes it’s just not happening. Those days fall somewhere in between the category of “I can’t deal with the idea of food prep” and “I don’t feel like leaving the house to get anything.” So I’m left with the last resort – delivery – but really, how many times does the Chinese delivery person need to see me in pajamas?
If you find yourself in this conundrum, do I have the solution for you! This one pan, 4 ingredient Turkey Sausage, Broccoli and Corn Skillet Casserole is sooooo incredible easy, and requires very little prep or cooking on your part. Plus it’s low fat, lower in carbs and packed with 31 grams of protein per serving. If you can manage to use a pair of scissors and a wooden spoon, you are ready to roll. To me, that’s way easier than having to change out of my pajamas, or be seen in them by a stranger for the 3rd time that week. If you are feeling like you can give a little more, cut these veggies up fresh and it takes literally less than 5 minutes of prep total. You can also prep veggies ahead of time while they are fresh and throw them in a freezer bag for later. Freezing veggies is one of the best ways to preserve as much of the vitamin content as you can. Summertime in Florida means an abundance of corn. I hate watching it go bad, so I often take it off the cob and freeze bags of it for days like these. Corn is such a great source of Vitamin B and fiber, so you can’t go wrong having some extra golden kernels set aside. Another thing I LOVE to do with this dish is add a little of this Garlic Mayo and some sriracha for a more grown up flavor. The skillet is great without it, but something about a little dollop of mayo enhances most everything in my book.

4 ingredient Turkey Sausage Skillet Casserole
A one skillet, low fat, lower carb dish that packs 31 grams of protein per serving and can be made in less than 20 minutes.
Ingredients
- 5 links Turkey Sausage, casings removed I use Fit N Active from Aldi
- 2 cups Corn kernels Fresh or frozen
- 3 cups Broccoli Fresh or Frozen
- 1/2 cup Low fat Mozzarella
Instructions

Saute Turkey sausage, breaking up large pieces until browned through completely. Add corn and broccoli and cook for another 10 min or until heated through. When meat and veggies are done, top with cheese, cover pan and turn off heat. Let sit for 5 min or until cheese is melted. Serve warm.
Recipe Notes
Add salt and pepper if needed, just test first because some sausage tends to be salty. Mix in Garlic Mayo and some sriracha for a rich flavor with a kick!
