We celebrated Easter this past weekend in total epic brunch style – deviled eggs, ham, green beans, breakfast quiche, homemade rolls, SWEET POTATO CASSEROLE BITES, roasted rainbow carrots, fresh fruit and my famous coconut pecan carrot cake topped with gorgeous edible flowers from Green Flamingo Organics. I even had a little fun making an Easter basket cake for Kevin to take to work for a cake auction!
So I have a little secret to tell. Well, it’s not really my secret. It is a radish secret. But I don’t think they will mind me telling you. Radishes, when sliced thin and sauteed in butter are magical. They absorb all that buttery goodness and basically become addictive little butter bombs that melt in your mouth. I am not a huge radish fan, but stir them in a frying pan with some butter and salt…YES, PLEASE! While I could just eat them straight out of a bowl this way, adding them to a breakfast quiche just makes the world complete in every way.
Here are 5 reasons you have to try this Radish, Spring Onion and Cream Cheese Breakfast Quiche:
1) Breakfast quiche is really code for “all day long quiche.” This one is savory so you could literally eat it for breakfast, lunch, dinner, snack, or all of the above and it just feels right.
2) Radishes are low in calories and have a soothing effect on the digestive system. They are also packed with nutrients such as vitamin C, phosphorus, and zinc, which can help to keep the body hydrated.
3) If you struggle with the idea of radishes, you are not alone. They can be a little pungent and spicy when eaten raw. Sauteeing them takes all of that away. They will absorb the flavor of butter, creating a soft, addicting, flavorful vegetable that may be your new spring favorite, especially in a breakfast quiche ;)
4) You can find radishes and spring onions easily year round, but they are best in the season of spring and can often be found at local farmers markets and in CSA produce boxes for a really reasonable price. 5) This breakfast quiche does a really neat trick – it can fool your meat-eating friends (or carnivorous husbands – is that just me?) The radishes tend to look like sauteed ham and have a chewy bite to them, mimicking a ham and cheese breakfast quiche.

Here is how to make Radish, Spring Onion, and Cream Cheese Breakfast Quiche:
1) Slice radishes and spring onions into thin slices. You can use a mandoline, but typically the radishes are so small it’s easier to do with a small, sharp knife.
2) Saute’ veggies in 2 tbsp salted butter over medium heat for approximately 5 minutes, or until the start to soften and turn golden brown. Set aside to cool slightly.
3) Crack 8 eggs into a large bowl.
4) Whisk cream cheese into eggs. It will have small lumps and that is ok because it will incorporate into the quiche as it bakes.
5) Add sauteed veggies to eggs and mix well.
6) Pour mix into deep dish pie crust.
7) Top with grated mozzarella.
8) Bake for 30-40 minutes, or until quiche is golden brown on top and the middle has set. It may puff up past the crust but will settle after removed from the oven and left alone for 5 minutes.
9) Garnish with fresh parsley and reserved spring onions.

Ingredients
- 1 cup radishes sliced thin
- 3 spring onions sliced thin
- 2 tbsp salted butter
- 8 large eggs
- 1 tsp salt
- 2 tbsp whipped cream cheese
- 9 inch deep dish pie crust frozen
- 2 oz low fat mozzarella cheese
Instructions

I know I grew up thinking radishes were for salads and garnishes. When I started getting them on a regular basis, I had to figure out something to do that wasn’t boring so I didn’t throw them out lol. Since the I have learned all the fun ways they can be put in meals and taste fantastic!! I also learned there are so many types – watermelon, diakon, black, french, etc. They are way more fun than I ever imagined!!
