I just love it when a recipe happens by accident. Last week I was making a cranberry sauce to go on my Leftover Thanksgiving Meatloaf recipe (coming soon). As I do with most of my cooking, I started to just throw things in the pan. Those are always my best creations. Unfortunately, it makes sharing the recipe with anyone else pretty darn challenging since there are no measurements recorded. When I start out recording as I go along, the recipe never turns out the same. So this time, I aimed for a middle of the road approach – let the creative juices flow, but just keep an eye on what and how much I was using. When it was done, I immediately recorded the ingredients. I am so glad because this Cranberry Marsala Sauce is absolute perfection. There are obviously so many varieties, but this one is my all-time favorite. I love that I can throw all 5 ingredients into a pan at one time, let it cook for 15 minutes AND THAT’S IT! The fridge does the rest of the work while I sleep. Boom. Convenience is my middle name these days so these quick and easy recipes are the schnizzle. All I’m saying is it’s going to be hard venturing out to try another version after this one. It will definitely be a major player at both my Thanksgiving AND Christmas table this year. I usually only do cranberry sauce to go with the turkey, but then I got to thinking about how amazing it would be with a Christmas ham…

In addition to making an amazing meatloaf glaze, we also learned this cranberry sauce swirled into a small bowl of unsweetened applesauce makes the PERFECT little weeknight dessert. I love my savory food, but sometimes you just need that little bit of sweet at the end of the meal to balance everything out. That’s where my eating typically derails completely. After behaving all day, I will blow it with something processed or with way too many calories – then feel like total crap afterward. This little sweet/tart combination has no processed sugar and is just the perfect amount of sweet without leaving you with the worst of all feelings – guilt!

The Perfect Holiday Cranberry Marsala Sauce
Ingredients
- 1 medium naval orange
- 3/4 to 1 cup honey depending on desired sweetness (I like to use the full cup!)
- 1/4 cup marsala wine
- 2 tsp vanilla extract
- 1 - 12 oz bag cranberries
Instructions

Zest and juice orange into a medium-sized saucepan. Add remaining ingredients and place over medium-high heat. Bring to a boil and then reduce to a simmer. You will hear the cranberries popping open which is a good sign! Cook for 15 minutes or until cranberries have a split look and sauce has started to thicken. Remove from heat and press gently with the back of a spoon, breaking up the cranberries a bit more. Let cool completely. The sauce will continue to thicken as it cools. Enjoy!
Recipe Notes
For easy cleanup, I HIGHLY recommend pouring this recipe into the serving dish as soon as it is done on the stove and then cleaning the pan right away (or at least soaking in water). The sauce tends to harden as it cools, so it is easier to tackle in the beginning.
