New Adventures!
Recently my sister and I decided to start a new blogging adventure together. We wanted to do something centered around food and travel, but with a unique twist. Something to help people that were stuck in a cooking rut and needed inspiration. Something to get those picky eaters to become adventure seekers and fall in love with new cuisine. Something that would take people outside of their comfort zones. We picked a name, set a date for launch and got to work. About a week later, my sister got a surprise that would take her way more outside her comfort zone than a new blogging adventure. She’s found out she was cooking more than just food these days. A baby was on the way!
The road to a new adventure always has some interesting twists and turns…
She found out really quick about the woes of early pregnancy. Nausea did not pass her by and it was going to be a little difficult to take someone outside of their culinary zone if she couldn’t even stand the smell of most things cooking. Oddly enough while testing out some of our new recipes, we found one that she not only tolerated well, but actually really enjoyed: jackfruit sliders. Pork, chicken or really, just about any other meat product was a no-no, but jackfruit was just right. I was baffled by this because these jackfruit sliders could fool me into thinking that you had used carnitas instead. But I guess her body knew the difference. It was a win!
Jackfruit sliders are incredibly easy to make to a quick dinner or fun party appetizer. They come together in less than 30 minutes and are sure to be a crowd pleaser. The combination of savory jackfruit, topped with a sweet cherry glaze, spicy gold bbq sauce and a pepperoncini crunch just works here, folks. If that wasn’t enough, the warm, melty brie will call you back to find more jackfruit sliders for seconds, thirds, fourths…. hey we don’t judge here. You do you.
WHAT IS A JACKFRUIT?
Jackfruit is a fruit that is typically grown in Asia, South America and Africa. It is often used as a meat substitute for many chicken and pork dishes because it has a similar texture. It does have a slightly sweeter taste, but marinated or spiced ends up covering that flavor and making it perfect for these jackfruit sliders!
The best part about these jackfruit sliders is they are EASY y’all! Theres no need to break into the fruit because we gonna skip over that mess and go into the canned version. These things can be GIANT and take quite a bit of work to prep. Trust me, no one will notice a difference with the canned version! If you want to put in some extra work, check out my homemade gold bbq sauce recipe. You can find it after the jackfruit slider recipe and it is a STUNNER! But if you want to keep it simple, just go with the pre-made versions. I have links for all of them below for a fast and easy meal that makes for a tasty dinner and easy cleanup.
Unfortunately we had to put a pin in our new blogging adventure for now, but the good news is I GET A NEW NIECE (YAAAY!!!). Plus, I will still be drumming up new culinary treats here at this site and have lots of fun new things to bring you in the next few months, from jackfruit sliders to other unique international cuisines that are easy to whip up. I even some really fun new dessert ideas! You don’t want to miss it so stay tuned and make sure to subscribe for updates ;)
With much love from my table to yours,

Jackfruit Sliders
-
Drain can of jackfruit and rinse well. Break apart pieces apart with hands into small shreds, removing any large seeds or hard pieces and place in a bowl. Toss with salt, pepper and 1 tbsp gold bbq sauce. Set aside.
-
Slice onion into thin half moons. Heat a skillet over medium high heat. Add a drizle of olive oil and saute onion for 10-15 minutes or until browned. Adding 1-2 tbsp of water from time to time will help speed up the cooking process.
-
While onion is cooking, preheat oven to 400 degrees. Place slider buns, outer side facing down onto a parchment lined cookie sheet. Drizzle with olive oil and top one half of slider with a slice of brie cheese. Bake for 8-10 minutes, or until cheese starts to melt and slider buns turn a golden brown.
-
When onion is golden and soft, add another 2 tbsp olive oil to pan. Toss in jackfruit and saute for 4-5 minutes or until it starts to brown and get crispy. Remove from heat and set aside.
To Assemble Sliders:
-
Place cherry preserves on bottom slider bun. Top with jackfruit mixture, coleslaw, a drizzle of gold bbq sauce, pepperoncinis and some sriracha if you like spicy. Enjoy!
