Charcuterie boards are the new creative outlet. Not only are they tasty, but there is something therapeutic about making a beautiful platter out of food, combining different textures, colors and designs. This one was extra special because it combined my love of spring fruit with another great love: breakfast!
What is AWESOME about this charcuterie is that most ingredients can be bought pre-made. Adding some easy homemade items adds a nice personal touch, especially if you are serving it at a party or brunch get together. I am really loving all the flavors of spring, so I went with a lemon basil and vanilla blueberry option, adding in some maple breakfast flavors in the pecans, as well as eggs, bacon, sausage and fruit that you would normally see in a breakfast dish. This is so versatile though…any fun breakfast food can be used to liven it up! You can easily make it vegan or gluten free by choosing items to fit your needs as well.
5 EASY TIPS TO MAKE THE MOST AWESOME SPRING BREAKFAST CHARCUTERIE:
- Buy pre-cooked breakfast items, like boiled eggs, bacon, sausage, etc. to cut down on time. If you have an instant pot and would like to make your own, see option in recipe.
- Choose a variety of spring fruits like strawberries, blueberries, raspberries or grapes. Mandarin oranges would be really fun too!
- Mini bagels fit exceptionally well onto a breakfast charcuterie board. Make some easy homemade cream cheese options for a fun customized board. French toast or pancakes with syrup to dip would be a great option too.
- When assembling your board, start with the largest items like the bagels, dishes and bunch of grapes. Move onto strawberries, eggs, meats and cheeses. Make patterns with food and shape the meat into swirls, roses, or waves. Fill the open spaces with the smaller berries. Its totally ok to have the same item in multiple locations. Have fun with it!
- If travelling with your breakfast charcuterie, consider using a baking dish or large cake pan with sides like THIS so that items don’t fall off the board. Spring Breakfast Charcuterie
Why bring another casserole to your next brunch get together when you can wow everyone with this easy charcuterie! Made with pre-cooked items then customized with homemade cream cheese spread options and super easy stovetop maple pecans.
Ingredients
- 3 whole cooked eggs*
- 3 links cooked chorizo* sliced
- 1 package pre-cooked bacon rolled into roses
- 1 package prosciutto slices folded over
- cheddar cheese cubes
- green grapes
- strawberries
- blueberries
- 6 mini bagels
Lemon Basil Cream Cheese
- 6 oz whipped cream cheese
- 1 lemon
- 2 tbsp maple syrup divided
- 2 tbsp fresh basil chopped
Vanilla Blueberry Cream Cheese Spread
- 6 oz whipped cream cheese
- 1/2 cup blueberries
- 2-3 tbsp maple syrup depending on sweetness
- 1/2 tsp cinnamon
- large pinch of salt
- 1 tsp vanilla extract
- 1/2 tsp almond extract optional but delish
Easy Maple Pecans
- 8 oz Pecan Halves
- 1/4 cup maple syrup
- 1/2 tsp cinnamon
Instructions
Lemon Basil Cream Cheese Spread

Combine 1 tbsp lemon zest, 1 tbsp lemon juice, basil, and 6 oz whipped cream cheese. Mix well and place in ramekin. Garnish with lemon slice and basil leaves. Store or freeze any extra for another time.
Vanilla Blueberry Cream Cheese Spread

Blend all ingredients in a small food processor until combined. Alternately, mash blueberries and mix in other ingredients until combined. Place in ramekin. Garnish with blueberries. Store or freeze any extra for another time.
Easy Stove top Maple Pecans

Heat non-stick or cast iron skillet over medium heat. Toast pecans until dark, but not burned, about 3 minutes. Add maple syrup and cinnamon. Stir to coat. Spread out onto parchment until cooled. Place in ramekin. Try not to eat all the leftovers.
Optional: Instant Pot Eggs* and Chorizo*

Pan sear chorizo on the saute setting until browned on all sides. Remove and carefully place chorizo and raw eggs in instant pot safe pan. Add 1 cup water to instant pot, place in trivet and then pan. Pressure cook for 12 minutes then quick release. Wipe pan and place in fridge to cool. When cool enough to handle, peel and slice eggs and slice chorizo.
Charcuterie Assembly

Place bagels, cream cheese containers and pecans, then grapes, strawberries, meats, cheese, eggs, raspberries, blueberries. Mix up the patterns and always put the blueberries and raspberries last to help fill open spaces.
