Spinach Pomegranate Salad with Creamy Kombucha Dressing

Turn heads in the breakroom with this awesome spinach salad packed with seasonally ripe pomegranates, goat cheese, your favorite protein and coated in a delicious creamy kombucha dressing!

Ingredients

Spinach Pomegranate Salad

  • 12 cups fresh spinach
  • 2 pomegranates seeds removed
  • 1 cup thinly sliced red onion
  • 4 oz honey goat cheese
  • 1/2 cup sliced almonds
  • 12 oz your favorite cooked protein (chicken, turkey, shrimp, tofu, etc) I used grilled chicken and it was delish!

Creamy Kombucha Dressing

  • 1/4 cup low fat Veganaise (or mayonnaise of choice)
  • 6 tbsp ginger kombucha
  • 1 tbsp raw honey
  • 1/4 tsp salt
  • 1 tbsp orange juice optional

Instructions

To Make Salad:

  1. Remove seeds from pomegranates and set aside (see TUTORIAL for an easy way to get seeds out of a pomegranate!)

  2. Place spinach in a bowl. Top with remaining salad ingredients. I like placing everything on top so it looks gorgeous when I open up my lunchbox!! Drizzle with kombucha dressing and enjoy!

To Make Dressing:

  1. Whisk dressing ingredients together with a fork until blended. Pour over salad and enjoy! Store any remaining dressing in the refrigerator.
