Roasted Cabbage Steaks with Apple Sausage Chutney

Ingredients

  • 1 medium red cabbage
  • 1/4 cup apple cider vinegar or balsamic
  • 1/4 cup + 1 tbsp maple syrup
  • 2 tsp olive oil
  • 1 large apple
  • 1 large onion
  • 1 lb ground turkey
  • 1/2 cup cranberries sugar free if possible
  • fresh basil for garnish
  • 1 tsp salt

Instructions

  1. Preheat oven to 400 degrees. Slice cabbage into 6 steaks.

  2. Whisk together vinegar and 1/4 cup maple syrup. Brush tops of steaks with mixture, reserving leftover mix.

  3. Roast cabbage for 20-25 minutes until tender when pressed with a fork and are nice and roasted on top. 

  4. While cabbage is roasting, peel and dice apple and onion. Saute for 2-3 minutes in olive oil. Add turkey sausage to pan. Break into small crumbles and cook all the way through. Add cranberries, salt, and remaining sauce to pan plus 1 tbsp maple syrup. Stir to coat.

  5. When cabbage is done, top with chutney and fresh cut basil if desired. Serve warm and enjoy!
