Spinach Dip Salmon Bake

A decadent Salmon dinner topped with a creamy leek and spinach white wine dip. Full of flavor, under 350 calories and done in 30 minutes or less!!

Ingredients

  • 1 cup quick cook brown rice
  • 1 tsp salt
  • 1 tbsp grassfed butter
  • 1 tbsp olive oil
  • 1 leek
  • 2 cloves garlic
  • 5 oz fresh spinach (approx 4-5 cups)
  • 1/3 cup white wine I used Sauvignon Blanc
  • 4 ounces organic cream cheese
  • 1 tsp salt
  • 1 tomato chopped
  • 2 lbs Salmon

Instructions

  1. Heat oven to 400 degrees. Bring water to a boil and cook rice according to package directions. While water is heating, clean leek and dice. Mince garlic. Heat large saucepan over medium-high heat. Add olive oil, then add leek and garlic. Saute for 2 minutes. Add 2 tbsp water to help steam and cook for another minute. Add spinach and cook until wilted. Add wine, cream cheese, salt and tomato. Mix until cheese is melted and mixture is creamy. While mixture is cooking, slice salmon into 6 equal pieces and place in foil pan (for easy cleanup). Top each piece with spinach mixture. Bake for 15 min or until Salmon is cooked through. When rice is done, add butter and salt then fluff with fork. Serve Salmon over 1/2 cup cooked rice. Enjoy!

Recipe Notes

Garnish with fresh tomatoes and sliced green onions. Goes great with a glass of chilled white wine!
