I am one of those people that get bored with the same type of food pretty quickly. One or two weeks is fine, but after that, it doesn’t quite hold the same appeal. This is especially true for snacks, unless it’s cheese. Cheese never gets old and will always hold the spot in my heart for best snack on the planet.
Unfortunately cheese is not the healthiest choice for every snack. Seeing that I eat five two to three snacks daily in between meals, something healthy is probably a smarter idea. So I am in constant search of the next cheese; the next big thing that is going to come close to that level of awesomeness. You guys, I think I found it with these Apple Samoa Protein Donuts. They fulfill every little craving I could possibly have throughout the day and are GOOD for you. Unlike typical donuts, these little bad boys are gluten free and are amped up with protein to get you from one meal to the next. Plus apples are in season right now and so incredibly delicious, it’s hard to resist using them in something. They have literally been sitting in a bowl on the counter for the last week begging me to make a yummy treat.
Ok apples, you win.
Actually I think I win. These things are soooooo good. Drizzled in enjoy life chocolate sauce with homemade Dulce de Leche and toasted coconut and O.M.G. yall….

Apple Samoa Protein Donuts
A guilt free "donut" snack packed with protein to get you to your next meal. Topped with chocolate, dulce de leche and toasted coconut.
Ingredients
- 1/2 cup coconut shredded
- 2 large seasonal apples preferably rome or honeycrisp
- 1/2 cup vanilla protein powder vegan if desired
- 4 tbsp PBfit
- 7-8 tbsp water
- 2 tbsp enjoy life chocolate chips
- 1 tsp coconut oil
- 2 tbsp dulce de leche sauce or vegan caramel sauce - see link above in article
Instructions

Toast coconut in a skillet over medium heat for 1-2 minutes until it starts to brown. Remove from heat and place in a bowl. Set aside.

Slice Apple into 4 rings per apple. Cut middle out into a "donut hole" or use a small round cookie cutter to punch out the centers.

Mix PBfit and protein powder. I used 7 tbsp water and halfway through added the last tbsp to thin out the mixture. Spread mixture on top of apples

Drizzle donuts with chocolate sauce, dulce de leche and top with toasted coconut. Serve immediately or store in the refrigerator.

Melt chocolate chips and coconut oil in a microwave on high for 1 minute. Stir until melted and creamy.
Recipe Notes
I make these in bulk and take them to go. Chill in the fridge until caramel and chocolate harden. When ready, place 2 donuts with the toppings facing each other (like you are making an apple sandwich) and slide them into a ziplock bag. Keep refrigerated until ready to eat.
