Last week I was craving red cabbage. What I really wanted was stuffed cabbage, but they just take so darn long to cook. Plus there’s all the parboiling and wrapping – bleh. Knowing I had a full work week ahead of me, I really only had time for fast meal prep recipes. Fortunately, my brain kicked into high gear and I remembered that roasted cabbage doesn’t take too long, and if I made a super yummy topping, it may be the next best 30-minute meal ever.
You guys, these roasted cabbage steaks turned out so much better than I could’ve ever imagined! I learned the hard way about cutting the steaks originally, but it was a quick fix. In order to keep them from falling apart, they need to be cut at least 1.5 inches thick. If sliced to thin, you’ll end up with coleslaw material. I mean, equally delicious, but not exactly what we are going for here. I decided to use red cabbage for this meal, which is available year round. However, green cabbage is typically best in season during late fall and winter, so if you want a variety that is more true to the season, you could always switch up from red to green. They are both loaded with vitamin C, so you can’t go wrong either way!
While the cabbage was cooking, I quickly chopped an apple and onion, sauteed it with some healthy ground turkey sausage and finished it off with dried cranberries and the remainder of a delicious maple vinegar sauce that helps carmelize our roasted cabbage to perfection! Here is how I make my Roasted Cabbage Steaks with Apple Sausage Chutney:
1)Slice Red Cabbage into 1.2 to 2 inch thick steaks. Place flat on a baking sheet lined with parchment paper or foil.
2) Brush steaks with maple vinegar sauce.
3) Bake 20-25 minutes at 400 degrees until tender and tops have started to caramelize.
4) While the cabbage is roasting, make apple sausage chutney.
5) Top cabbage steaks with chutney and serve warm.

Roasted Cabbage Steaks with Apple Sausage Chutney

Ingredients
- 1 medium red cabbage
- 1/4 cup apple cider vinegar or balsamic
- 1/4 cup + 1 tbsp maple syrup
- 2 tsp olive oil
- 1 large apple
- 1 large onion
- 1 lb ground turkey
- 1/2 cup cranberries sugar free if possible
- fresh basil for garnish
- 1 tsp salt
Instructions

Preheat oven to 400 degrees. Slice cabbage into 6 steaks.

Whisk together vinegar and 1/4 cup maple syrup. Brush tops of steaks with mixture, reserving leftover mix.

Roast cabbage for 20-25 minutes until tender when pressed with a fork and are nice and roasted on top.

While cabbage is roasting, peel and dice apple and onion. Saute for 2-3 minutes in olive oil. Add turkey sausage to pan. Break into small crumbles and cook all the way through. Add cranberries, salt, and remaining sauce to pan plus 1 tbsp maple syrup. Stir to coat.

When cabbage is done, top with chutney and fresh cut basil if desired. Serve warm and enjoy!
