I know, you may be thinking this is quite a bold statement to proclaim that this chicken marsala is the best out there. But when you have tried four hundred and fifty-seven thousand different versions and this one is still the best, it’s only natural to stand beside your decision. You see, my husband LOVES chicken marsala. If it is on the menu, it’s eventually going to make it to our dinner table. So after trying chicken marsala every which way, I found myself kind of turning into a chicken marsala snob after a while. This is just one of those recipes that I perfected a long time ago and not many other chicken marsala recipes really stand up well next to it. In fact, I am so proud of this chicken marsala that it is my “go to” as a dinner to make for friends and family.
Here are 6 reasons why you HAVE to try this amazing Chicken Marsala:
1) Seriously, you will save so much money, even if you buy expensive chicken. Most chicken marsala plates are $15 and up for one serving. You can get 6 servings from this recipe for less around the same price. Boom.
2) This recipe uses whole wheat flour, but you’d never know it. Fool even the pickiest of eaters.
3) Ummm…it has mushrooms and marsala wine. Enough said right there.
4) This recipe is MACRO FRIENDLY!! I count my macros most days because it keeps me on track with a healthy lifestyle and I can still eat the things I love. This recipe fits right in there and still takes amazing AND has a breaded coating. Yes, please!!
5) This recipe uses a small amount of honey and real Marsala wine, not the ready to use cooking wine that is LOADED with sugar. You end up with a nice thick delicious sauce without all the extra carbs and calories.
6) It really goes well with any side dish. I love serving it with sauteed green beans, a delicious side salad or these amazing Caramelized Brussels Sprouts. It’s such a versatile dish!!
Here is how I make my Best Ever Chicken Marsala:
1) Mix flour and seasoning into a bowl and set aside. Beat egg with 2 tbsp water and set aside.
2) Slice thicker chicken pieces in half or use chicken cutlets. Lay 3 chicken slices (or cutlets) on a long piece of saran wrap. Top them with another piece of saran wrap and cover completely. Lay the covered chicken on a cutting board and tenderize with a kitchen mallet or hammer.
3) Heat pan to medium-high heat and add 1.5 tbsp olive oil, swirling the pan to coat completely.
4) Dip chicken in egg mixture, then coat in flour mixture. Cook chicken in 2 batches, doing only 3 pieces the first time. Brown for approximately 2-3 minutes on each side, or until golden brown, then remove to a paper towel-lined plate.
5) Add remaining olive oil to the pan and repeat step 4.
6) When chicken is done, add mushrooms to the same pan with 1/4 cup water. Cook for 2-3 minutes or until mushrooms begin to soften.
7) Add marsala wine, 1/2 tsp salt, and honey to mushrooms. Bring to a boil.
8) Gently place chicken back into marsala wine mixture, making sure to coat all pieces with the sauce. Bring back to a boil, then reduce to a simmer.
9) Cook, uncovered for approximately 30 minutes or until the sauce begins to thicken.
10) Serve warm with your seasonal veggies of choice and enjoy!

- 3/4 cup whole wheat pastry flour I use Bob's Red Mill
- 1 tsp smoked paprika
- 1 tsp italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 tbsp olive oil or butter
- 2 cups mushrooms sliced
- 2 cups marsala wine
- 2 tbsp honey

I love chicken marsala but have’t actually tried to make it at home. It reminds me of when my boyfriend and I were first dating and we were in this small mountain town for the weekend and he ordered chicken marsala at this little italian place and it was AWFUL! To this day, I still have to convince him that chicken marsala is actually deliicous :-)
