One of my favorite party appetizers of all times has to be the infamous spinach dip in a bread bowl. I was always taught a lady does not stand right next to the food at parties. You make a small plate and move on. Spinach dip makes me want to throw the “lady” card right out the window. That creamy onion based spinach amazingness perched on fluffy white bread is just too much for me to ignore for long. Maybe I can still be a lady, and just put the whole spinach bread bowl on my little plate and THEN move on. Think anyone would notice??
As with most really amazing party dishes, they aren’t really the healthiest choice – especially for weeknight dinners. While I would love to stuff my face with a whole spinach bread bowl for a casual meal, I’m pretty sure the guilt I would have to digest really wouldn’t be worth it. However, this Spinach Dip Salmon Bake is the perfect thing to fill that void. The topping is full of leeks and spinach, finished in a creamy white wine sauce that is so good people! I have to stop myself from eating it straight out of the pan before it makes it to the salmon. This dish, with a side of rice clocks in at less than 350 calories with a whopping 31 grams of protein per serving. Plus its done in 30 minutes or less. It also makes a fantastic easy prep main dish for the holidays. Christmas dinner – done. You have both the flavors of an appetizer and main course all in one.
Boom. Take that plain ol’ spinach dip.
One other thing I want to mention that NO one likes is cleanup. Especially fishy cleanup. Baked on salmon is a real bummer, so I tend to use DISPOSABLE FOIL PANS. What’s the point of a 30-minute meal if you have to spend another 30 minutes letting a pan soak or scrubbing off fish scales? No thank you. If you can’t take the thought of throwing extra stuff away, just rinse this non-stick foil off in the sink and put it in your recycle bin. Seriously – save yourself now and check these pans out for yourself!

Spinach Dip Salmon Bake
A decadent Salmon dinner topped with a creamy leek and spinach white wine dip. Full of flavor, under 350 calories and done in 30 minutes or less!!

Heat oven to 400 degrees. Bring water to a boil and cook rice according to package directions. While water is heating, clean leek and dice. Mince garlic. Heat large saucepan over medium-high heat. Add olive oil, then add leek and garlic. Saute for 2 minutes. Add 2 tbsp water to help steam and cook for another minute. Add spinach and cook until wilted. Add wine, cream cheese, salt and tomato. Mix until cheese is melted and mixture is creamy. While mixture is cooking, slice salmon into 6 equal pieces and place in foil pan (for easy cleanup). Top each piece with spinach mixture. Bake for 15 min or until Salmon is cooked through. When rice is done, add butter and salt then fluff with fork. Serve Salmon over 1/2 cup cooked rice. Enjoy!
Recipe Notes
Garnish with fresh tomatoes and sliced green onions. Goes great with a glass of chilled white wine!
